Super Meatloaf 2 lbs. ground beef 1 cup oats 1 cup tomato juice 1/4 cup chopped onion 1 egg 2 t worcester sauce 2 t salt mix altogether, shape into a loaf, put in a pan. Bake 50 to 60 min. in preheated 350 degree oven. Let stand 5 to 10 min. before slicing. Makes 6 servings. Latin Salad 2 shredded potatoes 2 deep fried chicken breasts with bones for more flavor, brown in olive oil, add finely chopped onion finely chopped garlic a sprinkle of paprika scallions grated raw carrots cooked green beans cut across chopped parsley Pour drained pan juice sover cooled chicken Shred chicken with fingers. Layer potatoes on platter with chicken and vegetables. Top with parsley.
